thursday's ten: the cookie edition






i had to giggle when Casondra's immediate response to my tweet of "what should my thursday's ten list this week be about?" was "cookies!"


but, why not?


this should be a fun one to join in.


what are your favorite cookies to make?

do you have any holiday cookie recipes that are a go-to?

i'm sure lots of you can answer one question with 10 answers.  but since i posed them all, i'll answer them all :-)

what are your favorite cookies to make?
1. cake mix cookies
2. espresso bars (not technically a cookie, but YUM)
3. (vegan) gingersnaps...and that is my reminder to add the recipe to this blog!


what are your favorite cookies to buy?
4. oreos! mint or white fudge covered are my favorites, but any oreo will do :-)
5. lorna doones
6. animal crackers (does that count? eh, it's my list.  i'll say yes)


do you have any holiday cookie recipes that are a go-to?
they aren't so much cookies, but
7. peppermint bark
8. pumpkin scones


do you have a list of cookies that you want to make?
both are pinterest finds, naturally
9. oatmeal creme pies.  not for me, for my sweet husband.

Recipe of the Week -- Cake Mix Cookies

A few weeks ago, Marin posted this amazing recipe

And I may never, ever lose this weight now.

Actually, that's not an issue. They go like crazy when I take them anywhere. Definitely not a cookie you'll take home leftovers of.

Here's the cookies I made the first time:


This recipe is the easiest cookie ever.

1 box of cake mix of your choice (the first time I used the lemon she suggested. I have since done carrot cake, white cake with toffee crumbs mixed in, red velvet cake...they are pretty much all amazing)
1/3 cup butter
1/3 cup shortening
1 egg

Combine all ingredients until blended well
Roll dough into individual balls
Press dough into circles and arrange evenly on baking sheet
Bake at 375 for 9-12 minutes (I do 9 because I like mine a little dough-ier)

Enjoy!

I should mention that I had never even bought, much less used, shortening before in my life. But well worth it.

And cream cheese icing on the carrot cake/red velvet cake cookies is to DIE for.
