recipe of the week: buffalo chicken stromboli

i originally published this recipe a couple of years ago, but that version contained some ingredients that i no longer allow in our home. so here's the much healthier, real food containing and yummier version that we eat now!

buffalo chicken stromboli

1 ball pizza dough from trader joes or your favorite pizzaria
1 pound chicken breasts, cooked and shredded
1/2 cup hot buffalo wing sauce (i use frank's red hot)
1-2 tablespoons straight up hot sauce (i use frank's for that too)
1 cup mozzarella cheese, shredded
1/4 cup fiesta blend cheese (i use whole foods brand)
1/2 a large red onion, diced
1 carrot, shredded
2 stalks celery, diced
your choice of dressing on the side (ranch is my preferred, naturally)

you guys, this recipe is so.stinking.easy. every time i make it i mean to take pictures of the whole process, so next time i PROMISE i will have them for you :-)

spray a baking sheet lightly with olive oil (i have a mister that i use...i definitely prefer real olive oil to any other nonstick spray substance)

while the chicken is cooking, roll out your pizza dough--it helps to be more oval or even rectangular for this recipe.

mix the chicken and the hot sauces together, and put down the center of the dough in about a 1-2 inch wide strip (depending on how wide your dough is)

top with the onion, then the celery and shredded carrots

put the cheeses on top of the veggies

then start "braiding" the pizza dough
it'll look something like this when you finish. i then mist the top with a little more olive oil so that it'll brown nicely
bake at 350 for 20-30 minutes depending on your desired brownness.

and naturally, enjoy.

recipe of the week: taco seasoning and a couple of easy ways to use it (mexican pizza and taco mac)

that's right, folks. i have 3 recipes today, but they are all super simple and related :-)

i mentioned that i pretty much stopped using pre-packaged seasoning mix when i gave you my ranch seasoning/dressing recipe.  there are multiple reasons for this, but the added and very beneficial "side effect" is that i was able to tailor a seasoning mix exactly to our tastes. since i am on the "the spicier the better" side and anthony is on the "i'll drink milk with this medium salsa" side, that's trickier than you might think ;-) but i've found a blend that doesn't set his taste buds on fire and mine are happy with.

lora's taco seasoning

2 tablespoons ancho chili powder
1 tsp garlic powder
1 tsp onion powder
2 tsp red pepper flakes
1 tsp dried cilantro
1 tsp paprika
1 tsp cumin
1 tsp kosher salt
1 tsp black pepper

and here are two very simple ways to enjoy it!

taco mac
(basically a healthier & homemade version of hamburger helper)
1 pound ground beef
1 tablespoon taco seasoning
elbox macaroni
salsa verde (i prefer herdez)
ranch dressing

brown meat with taco seasoning while cooking macaroni noodles according to package directions.  after draining both noodles and beef, build your bowls.  ladle in noodles, top with beef, and add salsa verde and ranch to taste. it's a very simple weeknight meal that takes all of 15 minutes to prepare.

i wouldn't entertain with it, but hey. some days you need a 15 minute meal.

mexican pizza

1/2 pound ground beef
1/2 tablespoon taco seasoning
salsa (we used a fire roasted chipotle from whole foods)
pizza dough
cheese (i used the fiesta blend also from whole foods and fresh mozzarella)
cherry tomatoes, green onions, black olives, etc to top with
(this recipe would also be great with fresh corn, black beans, etc!)

 spread salsa onto pizza dough
 top with cheese
 brown meat with taco seasoning
top the salsa and cheese with the ground beef
add other toppings (apparently the night i took pictures i stopped here)
bake at 350゜for 15-20 minutes. enjoy!

recipe of the week: thai chicken pizza

i'm into easy food.
don't get me wrong.  i'm also into cook for hours but it's totally worth every moment food.
but this particular recipe falls into the first category.  easy.  cheap.  quick.

thai chicken pizza

1 pound of chicken breasts, cooked through and shredded
1 jar of peanut satay sauce (you'll find it in the asian section of most groceries. i got mine at trader joe's.)
1 ball of pizza dough
mozzarella cheese (i use about a cup)
1 carrot, shredded
3 or so green onions, chopped (green part only)
1/2 red onion, sliced thinly
however much cilantro you want
thai basil if it's in season (it wasn't here :-( )

begin by combining your shredded chicken and satay sauce

then roll out your dough on a floured surface.
(this is a good time to play with the dough if you dare)
then roll the dough into a shape. i chose the rectangle this particular evening because it's waaaay easier than a circle for me.
top with the chicken satay mixture
  and the cheese
and veggies (i didn't have red onion this night...oops!)
bake at 375 for about 12 minutes (depending on your oven of course)

 and enjoy!

i cut 12 pieces of this pizza.  assuming a serving size of 2 pieces (which is what i usually have) here's what you're looking at according to myfitnesspal.com
