...mic check...1...2...

what would i say about the months of silence?
well, nothing. 
what would i tell you about the things i haven't said in those months?
well, plenty

i would say that the payment i get in hugs and smiles and oh yeah illnesses ;-) far outweigh any paycheck i could ever receive

i would say that i never imagined that working in a preschool setting would be so rewarding

i would say that A and i are happier when the house is tidy. i would also say that when one of us is sick, it becomes a lot harder to keep tidy. we definitely work as a team around here, and i adore that

i would say that grown adults who know better can be vindictive and attempt to steal your joy because of their own bitterness all while wearing a sugary smile and proclaiming their love for Jesus
{i could write an entire series on the southern facade that i.desperately.hate. just be real for crying out loud. yanks have that one over southerners hands down}

i would say that only you can let someone steal your joy
{in other words, neener-neener, aforementioned person didn't win ;-) }

i would say that car shopping when you HAVE to car shop isn't as exciting as it seems to be
{moment of silence for lora's amazing passat...it finally died last month. and i have shed more than a couple of tears.}

i would say that fresh flowers in the house brighten my mood immensely. fresh flowers that my husband pick out for me just intensify that!

i would say that i fall more in love with texas each time i visit 
{year 2 for going on a missions trip to a children's home in the hill country. heart partially there}

i would say that getting your garden planted two months {two MONTHS} late just means a longer harvest period
{fingers crossed}

i would say that the God-encounters that you allow yourself to be aware of are more amazing that you could ever come up with by any stretch of your imagination

i would say that i have wanted to come type out long versions of each of these snippets and felt a block of some sort.  so for now they are snippets.  fuller versions on request...or as i have the time to tell them

but really, it doesn't matter what i have to say about the months between january and july.  we did a lot of living during those months.  times spent with great friends, playing board games, crashing on the couch to watch movies, having family over and A *finally* getting his youngest sister and i to watch the LOTR trilogy, taking time for a date night or two, celebrating my birthday and hosting gatherings for each of our best friend's birthdays, A speaking for the first time at our church plant...and there were also tears and hurt, and pain, and stress and confusion and wondering if we had made the right decisions about several things.

and that's life.

the next six months will hold much of the same, and i await it all expectantly.

life without pain means you forget to feel.  because of tears, i feel joy more radically.

i'm not going to make any promises i can't keep. but my desire is to be here, to be real, to live life authentically in this tiny blip in the internet where i get to have my real voice.

so for the good, for the bad, for all the lovely moments in between...here i am.

recipe of the week: honey sesame chicken (slow cooker!)

i'll be honest. when i first bookmarked this recipe, i did it with my husband in mind.  i really didn't think i would LOVE it.  i'm not a "sweet with my meat" kind of girl. but shocker...i actually really enjoyed it!  partly because tweaked it a bit and added some spice to it, and partly because i used really good honey :-)







honey sesame chicken


1 pound chicken thighs (i find they are more flavorful AND cheaper than breasts)
1 cup (yes, one CUP) of honey
1/2 cup low-sodium soy sauce
1/4 cup organic ketchup
2 tbsp sesame oil
2 tbsp sriracha hot chili sauce
2 cloves garlic, minced
1 onion, diced (i prefer the sweet vidalia variety when they're available!)
1 tbsp sesame seeds
1 tbsp red pepper flakes
2 tbsp cornstarch mixed with 6 tablespoons water



 mix together the honey, soy sauce, ketchup, sesame oil, and sriracha

 add the onion and garlic

 place the chicken in the slow cooker and sprinkle with sesame seeds and red pepper flakes
 top with sauce, and cook on low for 4-6 hours

remove chicken from slow cooker and remove bones/cut into bite sized pieces

 meanwhile, stir the cornstarch and water together into the sauce.

 return the chicken to the sauce and cook for another 10-20 minutes
 serve over rice.  enjoy!


obviously, the sugar content is rather high on this simply because of the honey.  but worth it :-)


based on 6 servings, rice not included in the nutritional facts.

it's a great day to put up my saturday post a day late!



so, we celebrated my birthday and anthony's awesome new job at the pub friday night with friends & family
slept in on saturday morning, then went to see one of the youth group kids in a play
and then anthony told me that he wanted to take me shopping for my birthday
he knew what he wanted to buy me, but knew that i would want input.

he wanted to buy me a north face jacket (which i've wanted for YEARS but haven't justified the money spent)
so we went to a couple of stores, and ended up finding a triclimate jacket on *clearance* for a hundred dollars off normal price...and a light hoodie on clearance as well.
i ended up walking out of the store with two jackets -- and a pair of reef flip flops that ALSO happened to be on clearance, all for well under the amount he had budgeted and set aside for the original jacket.  
i'm spoiled, blessed and happy :-)  


today is church, lawn mowing, and once upon a time/gcb with natasha.
i'm kind of not wanting this weekend to end!

...to begin this list on monday and publish it on wednesday (but keep the date as tuesday)
...to hope peyton signs with the titans...it would be nice to have him in town for awhile (especially while the colts rebuild which is code for 'suck for a few years')
...to be a slight bit obsessed with swagbucks. if you haven't joined yet, you totally should. (and if you click on that link i get your referral :-)
...to be oh-so-glad that spring has arrived in tennessee.  it was 80 yesterday. anthony and i had cocktail hour on our deck when we both got home from work. this is bliss -- when the temperature rises but the bugs haven't appeared yet!
...to have only just borrowed the first hunger games book.  hey, i still have not read/watched either twilight or harry potter (and won't) so i'm way ahead of my own game on this one!
...to make a recipe that flopped. i'm usually pretty confident in the kitchen and spotting recipes that anthony and i will both like, but the south indian mac and cheese (while it looked and smelled great) was just not our favorite. i'll still eat the leftovers, but i won't be making it again. (i put the link there since i won't be putting it on the blog, just in case anyone wants to try it...)
...to have a standing date with a friend to watch good bad tv 
...to just really be creeped out by some people

hey, it's ok (2.28)



hey, it's ok


...to be totally excited that it's in the 70s this week
...to race your husband home from work.  (hey, i left at 6.30 am and he started his day a few minutes before 9. i just wanted to walk in the door first!)
...to have eaten a proper full dinner and STILL indulged in the free pancakes at ihop. my cell group meets there every 2 weeks on tuesdays, and our meeting coincided with free pancake day. i couldn't turn down the free stack (and i only ate 2...gave the other away)
...to really need to catch up with blogging. one of these days.
...to be thrilled beyond belief that my hardworking husband got offered (and accepted) a full-time position where he's been working temporarily for 6 months (at UBS). he does some sort of tax financial client portfolio stuff. he likes it because he gets to solve problems and figure out more efficient ways to do things all day. i like it because he's happy at work and we have insurance now (hey, just being real).
...to have cried a bit at the series finale of parenthood. if you watch, you know why (and you cried too, admit it)
...to roll your eyes every time you see the commercial with people whining talking about their cell phone battery dying. ever heard of charging your phone?!

(this somehow didn't make it on the blog...but 6 days later we got engaged, so i suppose that's why :-)
bowling, starting our marriage prep class (although we weren't engaged yet), dinner cooked by anthony and dancing in his living room. 




2012

we've already celebrated with a meal at Stoney River on saturday, and tomorrow night we are just staying in and enjoying an evening together.  our gift to each other is buying the lady and the tramp bluray.  we've definitely become fans of keeping it simple and sweet :D

i have discovered a couple of things through taking these
